Legally, we can't call our honey 'raw' in the UK. However, we do not use any heat when uncapping and extracting our honey. During the uncapping process, we only use an uncapping fork or knife (unheated). After the frames have been spun in our extractor, our honey is gravity filtered through a set of two wire mesh strainers removing any larger particles. We choose to 'process' our honey as minimally as possible, so some small particles of wax or pollen may remain within our honey.
